Misha's Nutritious Veggie Soup

Our Sous Chef, Misha, tells us about his homemade vegetable soup.

"At times like these it is important not to throw any food away, so after collecting two days' worth of vegetable peelings and leftovers, I have made a delicious, warming vegetable soup, please see below for the method.

Simple ingredients for delicious soup

I used the following trimmings:

Onions, carrots, celery, peppers, potato skins, ginger peelings, a garlic clove, coriander stalks and a few spinach leaves.

My Method:

1. I put all the ingredients together in a big pot, adding some vegetable oil (or a knob of butter), a teaspoon of vegetable stock and then cover the veg in water.

2. I then bring it to a slow simmer for 15/20 minutes, and then turn off the heat and let it cool.

3. I then blend it all together, adding more water if I think it is looking too thick.

4. Once blended, I then add the delicate spinach leaves and season to taste - hey presto, a delicious but simple vegetable soup ready to eat right away!

You can of course add more herbs, spices or other ingredients to taste, such as nutmeg, Worcestershire Sauce, Tabasco, cumin, coriander, chilli flakes, curry powder or cayenne pepper which all make it even more tasty!

A small tip, I suggest serving it with a handful of parmesan shavings or spring onions sprinkled on top ...or even adding some blue cheese in at the end to melt in...delicious!"
